Crepes

One of my favorite memories of my brother-in-law Erik (who went to heaven this past February after battling Neuroblastoma since he was a 6 year old) is when he made all of us crepes when he was home for Christmas this past year. I will never forget that wonderful morning... we had tons of different toppings and the crepes just kept coming, hot off the griddle. I will never make these without thinking about Erik. He is greatly missed!


1 1/2 c. flour
1 T. sugar

1 t. cinnamon

1/2 t. baking powder

1/2 t. salt

2 c. milk

2 T. oil

1/2 t. vanilla extract
2 eggs


Mix the flour, sugar, cinnamon, baking powder and salt
together in a bowl and then whisk in the milk, oil, vanilla and the eggs until thoroughly combined. Yeah, it's that simple...

Plop a small pad of butter into a large skillet and heat over med-high heat until butter is bubbly. Pour about a half a cup of batter into the skillet and cook until slightly browned on one side and flip over and cook until slightly browned on the other side. Repeat until batter is gone.

And now for the fun part... top the crepes with your favorite toppings. I went with some vanilla yogurt, orange marmalade, dried cranberries and a sprinkling of cinnamon! Karl did vanilla yogurt,
strawberry jam and a heavy dusting of powdered sugar!

  2. at first i did not recall that Erik made these crepes. but i think Donna did mention it. but until now i never had a picture of them. Erik was a man of many skills. yes is is greatly missed. these crepes look delicious, thanks for your topping ideas too. sounds very yummy and healthy too. simple recipes that anyone can do are the best.
