Creamy Lemon Blueberry Bars!
My mouth is watering just thinking about them sitting in my refrigerator.
I didn't have any fresh blueberries so I used the ones I had frozen which worked just as well and I also substituted grapefruit zest for the lemon zest which worked wonderfully; I swear I could actually taste the grapefruit! Mmmmm....
Creamy Lemon Blueberry Bars~ (from Cookie Madness!)
1 3/4 cups flour
1 1/2 cups quick-cooking oats
1/2 cup brown sugar
1/2 cup sugar
1 t. salt
1/2 t. baking soda
12 T. butter, cut into small pieces
1- 14 oz. can sweetened condensed milk
2 large egg yolks
1/2 cup lemon juice
2 t. lemon zest
2 cups blueberries
1) Preheat oven to 350 degrees and grease a 9x13 in. pan.
2) Combine flour, oats, sugars, salt and baking soda in a bowl and
3) Press about 2/3 of crumb mixture into the bottom of the pan and set aside the rest for the topping. Bake crust for 12 minutes
4) Meanwhile, whisk the condensed milk, lemon juice, lemon zest, and egg yolks together and let stand for 5 minutes.
5) Arrange blueberries evenly over baked crust and pour lemon mixture on top. Bake 7 to 8 minutes.
6) Sprinkle remaining crumb topping over the lemon layer and bake for 25 more minutes.
I know it says to wait until they're chilled, but I'm not so good at that whole waiting thing.... and so we ate them after we got back from rollerblading... and they were amazing!!! This recipe is my new hands down favorite!
My other project for the last half of this week has been our porch chairs. They had that itchy, red, wool fabric on them and this morning I replaced it with that soft, light green fabric I found at a thrift store for $1! I didn't do the best job, but I'm pretty proud of it considering I've never refinished a chair before! They're much nicer to sit on now!!!

mmm!!... more of my very favorite ingredients - blueberries, lemon juice and zest (or grapefruit in your case) and oats! this looks very good, thankyou. the chair looks like its a bit hit with Misty. it looks pretty too.

p.s. i hopped onto Cookie Madness so that i could copy the recipe (it allows you to copy) and found this advert on the site - the link to this recipe that you can use the 2 left over egg whites for. it is turkey (or chicken) meatballs.
